Well buttz, unfortunately it looks like I'll have to wait until voting for the jam is over before I can upload the zip file for my game. That's alright though, all a part of the learning process.
It seems InboundShovel is still accepting late submissions and bugfixes after the deadline. There's a post in the Discord channel "jam-announcements" regarding it + a "late-submissions" channel.

I'm getting "Error: Couldn't load project data at path ".". Is the .pck file missing?

I think you need to provide every file and folder exported by Godot (ideally zipped), not just the .exe.
